Domecq Manzanilla is a special, very delicate type of Fino sherry made from Palomino grapes grown in cooler vineyards nearer the Spanish seacoast. It is then solera aged under a layer of flor yeast in bodegas in the coastal town of Sanlúcar de Barrameda. Here, the lower temperatures and higher humidity creates a thicker, more even flor layer, resulting in a pale, dry sherry that is at once pungent yet delicate, with a hint of saltiness. Manzanilla is more delicate than Finos matured in the warmer climate of Jerez de la Frontera. The name refers to the flavor, which is said to be reminiscent of chamomile, or manzanilla. Serve chilled with olives, almonds, boiled or grilled shrimp.
Delicious. Elegant and bracing, with intense herb, olive and apple flavors along with a whiff of salt air. It finishes beautifully, with a round, almond note.
