    Winemaker's Notes:

This is the eighth vintage of Pavie produced under the ownership of Mme. and Mr. Perse, and it was a classic year which demonstrated that the chateau has a truly exceptional terroir. The color is a deep and dense purple, with violet highlights which underscore the wine's youth. Its clean aromas highlight good intensity and well-defined fruitiness. Black currants, blueberries and assorted black fruit are present, together with flattering chocolate and spicy notes derived from careful aging in barrel. The first impression on the palate is faultless, and the quality of the vintage becomes evident as its taste evolves. The wine shows a full body, both tight and supple at once. Everything comes together to create an exemplary balance. The tannins are fine-grained, with a structure which ensures a long and brilliant future. The wine's class and nobility express the care taken during vinification to respect the vintage's potential. The finish is mouth-watering and long, worthy of a great Saint-Emilion.

This is a beautiful, polished 2005 whose powerful and fine structure produces a full and round impression. Forget it in the cellar for at least five years, but its great potential will allow the wine to age successfully for 20 years or more.

    Critical Acclaim:

I love the purity of fruit in this wine, with perfectly ripe blackberry, blueberry and raspberry on the nose. Complex and full-bodied, with hints of new oak and wonderfully polished tannins that caress the palate. Long, long finish. This is not the blockbuster it was from barrel, but rather a complete, balanced and gorgeous red. Best after 2015.

The 2005 Pavie is an absolutely amazing wine that has shed most of its oak aging (usually 24-28 months). Opaque purple in color, it is beyond belief in extract and concentration, but perfectly balanced and pure, with the oak well-integrated. Massively concentrated, and still a baby, this wine tastes more like it's two to three years old than one that’s been around for a decade. Intense notes of grilled meats, spice box, cassis, black cherry, licorice and graphite arepresent in abundance. Enormously endowed, but with superlative purity and balance, this is the greatest Pavie in the early Perse era, starting in 1998. Only the 2009 and 2010 rival this in his opinion, but I would add the 2000. This killer effort should drink well for another 50 years and demonstrates the greatness of this terroir owned by the Perse family. Only 7,000 cases were produced from a blend of 70% Merlot, 20% Cabernet Franc and 10% Cabernet Sauvignon. Bravo!

Saturated, deep ruby-red. Knockout nose combines blackberry, minerals, crushed rock, truffle, vanillin oak and flowers; showing none of the porty quality of the sample I tried last year. A hugely concentrated essence of a wine, offering an incredible combination of sweetness, vibrancy and precision of fruit, thanks to strong acidity and powerful underlying minerality. The chewy tannins are totally buffered by the wine's material on the explosive back end. This wine has it all!

Compared to the Pavie-Decesse, which essentially comes from a single block of old vines on limestone, this wine has clearly benefited by being an assemblage of soil types, with fruit from the foot of the slope contributing texture and richness. The 2005 Pavie should easily last for three or four decades.

I had the chance to try this wine and was blown away. It is in a class all its own. Accessible now but extremely ageworthy. Already well integrated with the structure and fruit to last.

Actually 4.5+ points. Color, this wine has a deep dark ruby red color, very seductive. Nose, there are a lot of black fruits going on, black licorice, mind toasty oak, vanilla, a hint of coffee beans, very complex nose indeed, some smooth nice dirt and dry leaves coming through also, extremely aromatic. Midpalate, very silky, black licorice dominating, black fruits, it is a little bit (just a bit) hallow on midpalate!, lush, smooth, dry, big, bold. Finish, this wine shows a lot of finesse, very elegant, luxurious, super silky, long, very long finish (60+ seconds and still feeling it!!), smooth nice tannins, mouth filling, very well balanced, layers and layers of black fruits coming through. Overall, this wine is very well made. It clearly shows a lot of potential. It has a nice roundness. It has not peaked yet. I would put it away until 2023-2047. I am enjoying this wine a lot! I would only recommend it to a very good wine expert. I am easily 96+ on this effort. I can see this wine reach 97 in 25 years. Happy drinking!
