    The 2005 CASK Cabernet has layers of ripe, red cherries, plum, vanilla, cocoa, and toast. The wine is remarkable now, especially if served with intensely flavored meats or cheeses, but it also can be aged for 10 years or more. This is a monumental vintage for CASK.

    Critical Acclaim:

    Black-garnet hue with a ruby rim. Upfront aromas of black cherry, coffee bean and graphite. Opulent cherry-chocolate flavors laced with minerals and youthful wood tannins. Stylish, lasting finish showcases purity of fruit (98% cabernet/2% petit verdot), balance and structure.

    Lots of new, smoky oak stands out on this polished Cab. Give it a little time in a decanter before you drink, as it pulls together, becoming more powerful and accenting the blackberry and cherry flavors. Should develop for a decade

    Great Blue Fruit flavor with a touch of cedar. Agree with other ratings that it needs to breath (about 30 minutes to one hour). Has the tannic structure to stand up over time (5-7 more years). Wine making style consistent with past vintage. If you love this wine, like me, you will always love this wine, especially in superb vintages. Wish I ordered more when I had the chance. Eagerly awaiting the 2007

    I admit some of my enjoyment in this wine is based on it being organic. That aside it is a great wine which is nicely balanced.

    I served this wine at a small gathering of friends. I could tell just by the smell of the cork this was going to be good. It was full bodied and hearty yet very smooth and fruity. We wanted to open my 2nd bottle but I am saving that for an 8 year taste comparison.

    I am not a big Cab drinker, but I really enjoyed Cask from Rutherford. Very silky with a little spice.. Excellent with the Italian dinner I served it with- a hearty ragu with pasta and an osso bucco.

    I'm glad someone else found this wine interesting enough to cellar for a 8 year comparison. I thought it was an excellent mid range: substantial body and character without overly narrow appeal. This is a perfect classy affordable wine for everyday use: hosting/gifting. I only buy my wine wholesale, so $100/per case to test 12 bottles is excellent. I open the first two over the course of the week as a diagnostic, test a few more with meals and friends, and cellar the remaining half for tasting in the future. So economical and fun!

    This is as good as it gets. A little pricey, but then again: you pay for what you get. Brought it on sale, if I had more mad money I would buy another case.

    Bottle had leakage from cork, seal was not air tight. So I will reserve judgment of wine until I open another bottle
