100% Xarel·lo fermented with indigenous yeasts in tank. Twice-weekly batonnage for a further 3 months in tank before bottling. No additives; unfined and unfiltered.

    The 2018 Xarel.lo is also a lot fresher than the wine from 2017, a constant across the range here. The 2018 is cleaner and has more intensity and more expressive aromas than the 2017, and it also has more acidity and tastiness, with the electric and clean palate that I already found in the initial vintage. The 2017 has developed more Mediterranean aromas, hints of hay and straw and a touch of esparto grass, but here there is more citrus and even a minty touch. There is no deviation or oxidation; it was bottled unfiltered and with no added sulfur. It's lighter, with less structure, but it also has more freshness and better drinkability. 30,000 bottles produced. It was bottled in April 2019.

Can Sumoi is the newest project from Pepe Raventós and Francesc Escala - a found treasure in the mountains of the Baix Penedès where they realize their vision and dreams in the remarkable landscape and passion for natural wines. Can Sumoi is an agricultural farm dating to 1645, located in Massís del Montmell, 600 meters above sea level. The estate has 400 hectares of land of which 30 are vineyards planted with Parellada, Xarel.lo and Sumoll; the rest is forest of oak, white pines, tall oaks and old stone walls that surround the winery and three farmhouses from the end of the 17th century, where wine used to be made.

Primarily associated with the Penedès region of Spain, Xarel-lo plays an important role in most Cava blends along with Parellada and Macabeo. Prized for its high levels of acidity and polyphenols, Xarel-lo adds strength, body and a distinct greengage or earthy character to these blends. Somm Secret—Just a few miles northeast of Barcelona, Xarel-lo vineyards around the town of Alella produce highly regarded still wines with fresh lemon and stone fruit flavors.

A superior source of white grapes for the production of Spain’s prized sparkling wine, Cava, the Penedes region is part of Catalunya and sits just south of Barcelona. Medio Penedès is the most productive source of the Cava grapes, Macabeo, Xarel-lo, and Parellada. Penedes also grows Garnacha and Tempranillo (here called Ull de Llebre in Catalan), for high quality reds and rosès.
