    COMMENTARY: The 2020 Marine Dubard Coeur du Mont Sauvignon Blanc is fresh, dry, and textured on the palate. TASTING NOTES: This wine exhibits pleasing aromas and flavors of dried earth, light fruit, dried herbs, and leaves. Enjoy it with steamed clams in a garlic wine broth. The Dubard family craft fine terroir-driven wines from the rolling hills of clay and limestone found in the Southwest of France. They have always been known for their meticulous farming, with a commitment to vine health that was recently recognized by the French government’s HEV (high environmental value) certification. This new certification covers biodiversity conservation, plant protection strategy, management of fertilizer use, and management of water. Winemaking is fastidiously traditional, with long gentle presses, indigenous yeasts for the fermentations, and stainless steel used for the elevage. From the citrus and mineral-infused Sauvignon Blanc to the delicate and lacy rose, the wines are consistently delicious and over-deliver for their humble price tags.

Capable of a vast array of styles, Sauvignon Blanc is a crisp, refreshing variety that equally reflects both terroir and varietal character. Though it can vary depending on where it is grown, a couple of commonalities always exist—namely, zesty acidity and intense aromatics. This variety is of French provenance. Somm Secret—Along with Cabernet Franc, Sauvignon Blanc is a proud parent of Cabernet Sauvignon. That green bell pepper aroma that all three varieties share is no coincidence—it comes from a high concentration of pyrazines (herbaceous aromatic compounds) inherent to each member of the family.
