    The 100 square metres of Thymiopoulos vineyards are situated in the Valley of the Muses, which lies 60km east of the ancient site of Delphi. The vines here have an average age of 45 years, and produce between 800-900kg of grapes annually. This area benefits from the cooling winds that blow down from Mount Helicon." The soils in the Naousa are rich in clay and limestone, and the Thymiopoulos family has farmed their land here for several generations according the principals of biodynamics. All wines are fermented with wild yeast, and raised without any contact with oak.

    Whether it’s playful and fun or savory and serious, most rosé today is not your grandmother’s White Zinfandel, though that category remains strong. Pink wine has recently become quite trendy, and this time around it’s commonly quite dry. Since the pigment in red wines comes from keeping fermenting juice in contact with the grape skins for an extended period, it follows that a pink wine can be made using just a brief period of skin contact—usually just a couple of days. The resulting color depends on grape variety and winemaking style, ranging from pale salmon to deep magenta.

    Naoussa is home to one of Greece’s most age-worthy reds: Xinomavro. Flourishing on the sun-exposed, southeastern-facing slopes of Mount Vermio between 700 to 1,700 feet in elevation, some say Xinomavro is Greece's red counterpart to its famous white, Assyrtiko. Others liken it to Italy's well-respected, highly perfumed and powerful, Nebbiolo.
