Somm Note

Winemaker Notes

The color of this fine Cabernet is medium plum with brick red edges. The aromas are deep with supple bing cherry and dried cherry notes and backed by integrated vanilla and toasted oak. The palate enters with silky tannins and is wrapped generously with ripe cherry and cassis. The palate is multi-layered with cherry and boysenberry with layers of integrated French oak tannins and lactone

which brace the fruit and provide a matrix on which the fruit presents itself in elegant fashion.

This wine pairs well with sea salt seasoned Rosemary chicken served with fresh steamed green beans and organic couscous with wild mushrooms.

Notes of cocoa-dusted black cherries, dried blueberries, leather, sweet tobacco and nutmeg. Dense and fleshy with a full body and plush, velvety tannins. Deep core of ripe purple fruit and a chocolaty finish.

Vinum Cellars, California
Vinum Cellars Winery Image

Vinum Cellars is a collaboration of winemakers Richard Bruno and Chris Condos, who first became friends while they were students at UC Davis. They share a long standing passion for Chenin Blanc and fondness for the more obscure grape varieties. After graduation, Chris went to work for Pine Ridge as Enologist, and Richard went to Bonny Doon as their distiller. Shortly after, their friendship was solidified over Chenin Blanc with the creation of their first wine "Pointe Blanc". Currently the Vinum Cellars team is working with over 10 grape varieties from Placer County Cabernet Franc to San Benito County Viognier. In addition to the Vinum Cellars partnership, they are employed as winemakers: Chris with Kathryn Kennedy Winery and Richard as a Napa winemaking consultant.

"We are a small, California winery committed to crafting quality wines from single vineyards in California’s premium coastal and cool climate growing areas. “It is our basic winemaking philosophy to work with great grape growers to develop the best fruit in the vineyard. We pick the grapes at optimal ripeness and gently process the fruit. In the winery, we are experimental with yeast strains and use different cultures for each variety. Our belief in the use of older French Oak barrels allows the varietal fruit of our wines to be expressed. We are committed to experimenting and learning new winemaking methods while preserving an old world approach.” - Richard Bruno & Chris Condos

As Paso Robles, California has soared in number of wineries and gained in popularity, Cabernet Sauvignon has firmly taken root as the region’s number one varietal. Alone, it accounts for just over 40% of plantings and is grown throughout both the western and eastern sides of the appellation. Though viticulture here dates back to the 18th century, Cabernet Sauvignon didn’t emerge as a significant grape here until the 1970’s. But since then it has definitely made up for lost time.

Legendary winemaker and consultant Andre Tchelistcheff first recognized Paso’s potential with Cabernet Sauvignon in the early 1960’s. The calcareous soil and dramatic diurnal temperature changes of Paso’s westside particularly intrigued him. Today modern winemaking techniques and focused experimentation with various clones, rootstocks and vineyard strategies optimize the region's ideal combination of soil and climate to deliver the best fruit possible.

The results are evident in the glass. Paso Robles Cabernet Sauvignon can be mesmerizing, with rich aromas and flavors of blackberry, cassis, black cherry, graphite, toasty oak, vanilla and spice. The structure, balance and unbridled opulence of these wines impress from first sip to last. Not surprisingly, Paso Robles Cabernet Sauvignons have steadily grown in reputation, not just in the U.S., but around the world.
