    In 1962, Bodegas San Valero was the first winery introducing industrial bottling in Aragón, as well as the second one in Spain.

    In 1983, the winery introduced the monitored grape harvesting, setting up quality control parameters in the harvesting process.

    Bodegas San Valero has bet on doing research on vineyards to minimize pesticides use, by using pheromones in its stead. In addition to rationalize pesticides use, this system allows them to improve the preservation of the environment, reduce carbon footprint, guarantee food security and increase their wines final quality.

    Responsible for some of the most stunning old vine red wine on the planet, Carignan has an amazing capacity to survive dry, arid climates and still produce lovely, mouthwatering wine. In Spain it goes by the name of Mazuelo or Cariñena and while it may have originated there in the province of Aragón, its popularity lies elsewhere, particularly in Languedoc-Roussillon. Somm Secret—Historically Carignan did not enjoy the respect that it does today. In the mid 20th century, Carignan covered nearly 140,000 ha in Algeria, where it was made into low quality bulk and blending wine to supply mass-market demand.

    This northeastern Spanish town is believed to be the origin of the grape with the same name. However, Carinena (in French, known as Carignan) has all but been abandoned in favor of Garnacha, which is better suited for its arid climate. The region of Carinena also produces fine examples of whites based on Garnacha Blanca, Macabeo, Parellada and others.
