Winemaker Notes

Il Silene is our regular cuvée. Its name derives from a wild flower – very common in our fields - Silene Vulgaris. It is obtained from a selection of Cesanese d'Affile grapes (100%) coming from vineyards planted in 1981 and 2002. Grapes are hand-harvested when ripening has reached an optimal level, and fermented in stainless steel tanks to preserve the characteristic aromas of Cesanese.

    The 2020 Cesanese Superiore Silene lifts from the glass with a beautiful blend of wildflowers, lavender and crushed wild berries. It’s soft and round on the palate, with motivating acidity and crunchy red and blue fruits that cascade throughout. A sour citrus hint puckers the cheeks, as the mouth is left watering for more through the licorice-tinged finale.

The winery is based in Olevano Romano in the south-eastern sector of Rome province. The hilly and montainous country - mostly volcanic - is characterized by micro climatic conditions that have allowed - during the course of the centuries - the developing of remarkable viticultural wisdom and skills. Ciolli began to bottle his wines in 2001, though the family is working his vineyards from at least 4 generations. The limited surface (about 15 acres) allow a very careful managment of each single detail from the winter pruning to the bottling. All the work is done manually. All the vineyards are owned by the Ciolli family and lie on the gentle slopes of a hill few kilometers south of Olevano, at about 450 meters above sea level. The southern aspect, the deep red coloured volcanic soils the hot but dry summer days and the fresh August nights give Cesanese d’Affile perfect ripening conditions. The basic principle it to craft wines able to express the aromatic character that arise from the interaction between grape and terroir, without loosing the “memory” of tradition and respecting the natural environment.

The Cesanese grape, full of red berry, spice and rose, is responsible for Lazio’s only true local reds. Lazio’s most famous white wine, called Frascati, is based on the local Malvasia del Lazio and Trebbiano Toscana. A sweet version, called Cannellino di Frascati, is also made.
