Winemaker Notes

The Signature Cabernet Sauvignon has been Chappellet's flagship wine for more than three decades. It is a benchmark for the long-lived hillside wines of the Napa Valley; full of structure and aging potential, yet seductively forward in its varietal character. The dry, rocky soils of Pritchard Hill produce small, intensely flavorful grapes. Crop thinning allows for full, even ripening and further elevates flavor complexity.

Deep, rich and beautifully structured, this is a classic expression of hillside Napa Valley Cabernet Sauvignon, offering alluring aromas of blackberry, cassis, and chocolate, along with hints of espresso, anise and fragrant herbs. On the palate, creamy oak and concentrated berry and black cherry flavors are underscored by velvety tannins and subtle notes of cola, clove, and black licorice.

The 2016 Cabernet Sauvignon Signature has a very deep garnet-purple color and opens with wonderfully expressive notes of warm cassis, baked plums, black raspberries and kirsch with suggestions of underbrush, lilacs and chocolate box. Medium to full-bodied, the palate reveals layers of red and black berries with stunning freshness and an approachable, grainy texture, finishing long and earthy.

COMMENTARY: One of the most exciting wines I first sold as a specialty wine retailer was the 1971 Chappellet Cabernet Sauvignon—I sold this wine in the mid-1970s at the Ashbury Market in San Francisco. This offering broadened my horizons and proved to be an important stepping stone and took me on a journey into discovering some of California's new and emerging wineries at that time (Caymus, Stag's Leap Wine Cellars, Fetzer Vineyards, Kenwood Vineyards, and many more). The 2016 Chappellet Signature Cabernet is again one of the top players in the Napa Valley. TASTING NOTES: This wine exhibits the pinnacle of power and balance. Its aromas and flavors of luscious black fruit, subtle oak accents, and savory spices make it a perfect pair mate with a juicy ribeye and a dab of a triple crème blue-veined cheese. Tasting this wine recalls the best moments of my early retailing days. (Tasted: October 23, 2018, San Francisco, CA)

This savory cabernet grows on Pritchard Hill, where Donn Chappellet settled in 1967. These volcanic hills east of St. Helena provided Phillip Corallo-Titus with the raw material for a refined and lilting 2016. He didn’t overextract the wine, so the tannic detail lasts with umami notes of freshly dug earth, black mushrooms and blueberry skins. The fruit is integrated, with dark blueberry density and brighter purple notes feeling refined, putting the pretty side of cabernet on view—a rarity among the muscle cabs of Napa Valley.

This is made entirely from mountain fruit along the eastern hills of the Napa Valley, including the producer’s estate. It is blended with 12% Petit Verdot and 9% Malbec. Smoky oak, clove and tobacco accent red fruit and a savory bottom line of cedar and sage. It’s rich but well behaved.

Chappellet Winery Watch Chappellet's Amazing Story Winery Video
For more than four decades, the Chappellet family has been crafting world-class wines from fruit cultivated on the steep, rocky slopes of Napa Valley's renowned Pritchard Hill. As one of the first wineries to pioneer high-elevation hillside planting, and one of the few remaining great family-owned Napa Valley wineries, Chappellet Vineyard and Winery has influenced generations of vintners. Throughout its history, Chappellet has also established an enduring legacy as one of California's most acclaimed producers of Cabernet Sauvignon.

The Chappellets' romance with Pritchard Hill began when Donn and Molly Chappellet first glimpsed the mountain's spectacular vistas in the late 1960s. Inspired by the notion that Bacchus loves the hills, Donn and Molly followed the advice of legendary winemaker André Tchelistcheff and settled on the rocky eastern slopes of the Napa Valley. There, on the mountain’s serene and picturesque hillsides, the Chappellets established their home and winery, raising their children and cultivating the vineyards.

Since being founded by Donn and Molly in 1967, Chappellet has earned acclaim championing the robust power and complexity of wines crafted from mountain grapes. At the same time, Chappellet has helped to establish Pritchard Hill as one of California’s most revered winegrowing sites. To honor the mountain's rich, expressive character, the winemaking team focuses on creating extraordinary, age-worthy Cabernet Sauvignons that embody the intensity and finesse of fruit from Pritchard Hill.

One of the most prestigious wines of the world capable of great power and grace, Napa Valley Cabernet is a leading force in the world of fine, famous, collectible red wine. Today the Napa Valley and Cabernet Sauvignon are so intrinsically linked that it is difficult to discuss one without the other. But it wasn’t until the 1970s that this marriage came to light; sudden international recognition rained upon Napa with the victory of the Stag’s Leap Wine Cellars 1973 Cabernet Sauvignon in the 1976 Judgement of Paris.

Cabernet Sauvignon undoubtedly dominates Napa Valley today, covering half of the land under vine, commanding the highest prices per ton and earning the most critical acclaim. Cabernet Sauvignon’s structure, acidity, capacity to thrive in multiple environs and ability to express nuances of vintage make it perfect for Napa Valley where incredible soil and geographical diversity are found and the climate is perfect for grape growing. Within the Napa Valley lie many smaller sub-AVAs that express specific characteristics based on situation, slope and soil—as a perfect example, Rutherford’s famous dust or Stags Leap District's tart cherry flavors.
