Winemaker Notes

Fragrant and floral, with enticing aromas of lemon zest, vanilla cream, peach and buttered toast. Nice notes of cinnamon and ginger with a hint of Asian pear round out this lovely nose. Fat, creamy and luscious on the palate, delivering fabulous flavors of lemon cream pie, green apple, hazelnut and casaba melon, with accents of nutmeg, honeysuckle and almond. Delightfully silky on the finish, ending with toffee, tropical essences and citrusy crispness.

    There's no doubt that the Daou brothers aim for a richer style on their Chardonnay than most Central Coast growers, but each vintage is an evolution that brings more nuance to the bottling. This starts with lemon syrup, butterscotch and plumeria on the nose, while the palate starts and finished with penetrating mandarin-rind-powered acidity that cuts through flavors of vanilla, crème brûlée, cashew and roasted marshmallow.

DAOU Mountain stands alone at an elevation of 2,200 feet, rising from the heart of the Adelaida District in the rugged coastal range west of Paso Robles. The steep slopes here reach up to 56 percent, with uniform exposure to the elements across the estate. It is a terroir of power, purity, and symmetry with every natural asset necessary to pursue the perfect Cabernet Sauvignon—including calcareous clay soils that emulate Bordeaux’s Right Bank and a climate that mirrors St. Helena.

One of the most popular and versatile white wine grapes, Chardonnay offers a wide range of flavors and styles depending on where it is grown and how it is made. While it tends to flourish in most environments, Chardonnay from its Burgundian homeland produces some of the most remarkable and longest lived examples. California produces both oaky, buttery styles and leaner, European-inspired wines. Somm Secret—The Burgundian subregion of Chablis, while typically using older oak barrels, produces a bright style similar to the unoaked style. Anyone who doesn't like oaky Chardonnay would likely enjoy Chablis.
