Fruit is pressed in an antique Coquillard press purchased from Champagne. Juice goes directly to old barrel for primary fermentation, malo and aging. Winemaking is reductive with very little to no racking.
Matthieu Goury, crafts the wines under the Domaine de Chevillard label. The character Matthieu is able to coax out of his fruit is uncanny. He currently farms around 9.5HA, about half of which is Mondeuse. He has tiny plots of Pinot Noir and Altesse and a good portion of Jacquère as well. All the farming is organic. His winemaking is generally quite reductive as he uses no SO2 until bottling, and then only around 15ppm total. He does not punch down the reds or use batonnage for the whites and he rarely racks the wines. Whites are pressed directly to old barrel where all except the Altesse go through malolactic. Reds ferment in concrete after a long maceration and then go to old barrel. He uses a beautiful, antique basket press that he bought from Champagne and had refurbished. It sits on the second floor so he can avoid pumps and use gravity to move the wine.
