    A new cuvée this year to replace the Grèves and Vignes Franches grapes where agreement with the owner could not be reached. Medium deep purple, slight spritz and fermentation aromas on the nose make the bouquet hard to judge – but this has not yet been racked. Medium deep purple, plump and gorgeous ripe raspberry fruit, just the right structure behind, some orange peel, very pretty and certainly long.

Dominique Lafon needs no introduction to lovers of fine Burgundy. Having started his career working for a well-known pioneering agent in Beaune back in the very early 1980s he then proceeded to take over his family estate, Domaine des Comtes Lafon in 1984. In 1987 he began the project of taking back all of the estate’s vineyards that were being farmed by métayers or sharecroppers. Within a few short years, his wines were some of the most prized in Burgundy and the rest is history. In 2008 he started his own label made up of vineyards, both owned and rented, in Meursault, Puligny-Montrachet & Beaune. He prefers the tension and mineral qualities of grapes from upper hillside slopes and his wines reflect this preference. All vineyards are farmed biodynamically by the Comtes Lafon team and Dominique does most of the cellar work himself. This is a labor of love and a return to his roots, when he was just one of a small team of workers on the family estate. Though legally a négociant, this is only because he makes his wine at the Château de Bligny-Lès-Beaune, a custom crush operation that he runs with a friend. He controls all of the farming.

Thin-skinned, finicky and temperamental, Pinot Noir is also one of the most rewarding grapes to grow and remains a labor of love for some of the greatest vignerons in Burgundy. Fairly adaptable but highly reflective of the environment in which it is grown, Pinot Noir prefers a cool climate and requires low yields to achieve high quality. Outside of France, outstanding examples come from in Oregon, California and throughout specific locations in wine-producing world. Somm Secret—André Tchelistcheff, California’s most influential post-Prohibition winemaker decidedly stayed away from the grape, claiming “God made Cabernet. The Devil made Pinot Noir.”

While the city represents the epicenter of wine production in Burgundy, the term, “Beaune” also refers to the specific sub-appellation of the greater Côte de Beaune, whose vineyards climb up the pastoral slopes that border the city to its west. Originally founded as a Roman camp by Julius Caesar, the city of Beaune eventually became the seat of the dukes of Burgundy until the 13th century. Today it is home to top négociants such as Louis Jadot, Joseph Drouhin, Louis Latour, and Bouchard Père et Fils.

The appellation, dominated by Pinot Noir plantings, represents a lovely and charming place to begin to understand red Burgundy. Its sandy soils create light and supple, floral driven Pinot Noir. These wines are designed to be enjoyed within five to 10 years. The vineyards of Beaune span a broad swath of Premier Crus from Savigny-lès-Beaune to its border with Pommard.

Chardonnay acreage here has been increasing here in the more recent years.
