The 2018 Gerard Bertrand Clos du Temple Rose pours a very pale rosé. Aromas of ripe fruit (apricot, white peach), flowers (rose) and spice (green pepper). The palate is a juicy ripe apricot, white peach,rose and spice with a mild tobacco finish.

    This wine is pale pink, showing intense creamy fruit alongside a silky texture. It reveals a fine oak and battonage structure, backed by the long fine acidity typical of the schist and limestone hills of the region of Cabrieres, It’s powerful enough to match rich gastronomic flavours but this is a rosé to also lay down in the cellar and watch it develop complex flavours with age.

    This is a lovely, complex, layered and inviting rosé. It opens with a light woody top note that suggests cedar-grilled apple, clove-spiked orange, tangerine peel and peach pit. The palate is silky and seductive, with an initial weight and lushness that's balanced by bright orange-flavored acidity and a lovely texture of delicate tannins and citrus pith through the close. Hints of white florals, like clover and Spanish broom, and garrigue also unfold on the finish.

    A charming nose of baked lemons, mustard seeds, cedar and dried flowers. It’s full-bodied with palpable volume on the mid-palate. Well-rounded and voluptuous with a spicy edge towards the structured finish. From biodynamically grown grapes with Demeter certification.

The bottle Clos du Temple is an exclusive creation by Gérard Bertrand's teams. A geometrical representation of the temple, whose elegant proportions are inspired by the golden section, the Phi : The square base, symbol of the earth, takes up the cubic foundations, the cylinder elevation is intended as an evocation of the connection between earthly and celestial forces. The dome, a perfect circle on the shoulders of the bottle, is adorned with a fine gold decoration to underline the gentle curves of the hills surrounding the Clos du Temple. The Bleu Royal is a tribute to King Louis XIV, a great lover of Cabrières wines.

Whether it’s playful and fun or savory and serious, most rosé today is not your grandmother’s White Zinfandel, though that category remains strong. Pink wine has recently become quite trendy, and this time around it’s commonly quite dry. Since the pigment in red wines comes from keeping fermenting juice in contact with the grape skins for an extended period, it follows that a pink wine can be made using just a brief period of skin contact—usually just a couple of days. The resulting color depends on grape variety and winemaking style, ranging from pale salmon to deep magenta.

An extensive appellation producing a diverse selection of good quality and great values, Languedoc spans the Mediterranean coast from the Pyrenees mountains of Roussillon all the way to the Rhône Valley. Languedoc’s terrain is generally flat coastal plains, with a warm Mediterranean climate and frequent risk of drought.

Virtually every style of wine is made in this expansive region. Most dry wines are blends with varietal choice strongly influenced by the neighboring Rhône Valley. For reds and rosés, the primary grapes include Grenache, Syrah, Carignan, Cinsault and Mourvèdre. White varieties include Grenache Blanc, Muscat, Ugni Blanc, Vermentino, Macabéo, Clairette, Piquepoul and Bourbelenc.

International varieties are also planted in large numbers here, in particular Chardonnay, Sauvignon Blanc and Cabernet Sauvignon.

The key region for sparkling wines here is Limoux, where Blanquette de Limoux is believed to have been the first sparkling wine made in France, even before Champagne. Crémant de Limoux is produced in a more modern style.
