Harvesting grapes by hand and keeping them as whole clusters from the vineyard to the press helps create a creamy, full-bodied wine with a traditional champagne feel and finish. After disgorgement of the yeast, a dosage of two different reserve wines was introduced to give this vintage its unusual combination of delicacy and power.
