The 2002 Hewitt Vineyard wine is 100 percent Cabernet Sauvignon and comes from the vineyard's oldest plantings. They carefully avoided crushing the fruit while separating and discarding the stems. Using only the "free run" (wine that drains from the skin without pressing and is generally superior to press wine), Hewitt allowed fermentation to extend for more than 40 days.
