    Winemaker Notes

This fortified port-style wine has been a winning idea for many years. We have been able to use some very ripe cabernet sauvignon in an unorthodox manner-- making a sweet wine by truncating fermentation midway through. This technique adds a bit of heat to the sweet result, and we feel that its fruit-intense character requires very little barrel time, and no new wood. A fun alternative for dessert, and a way to extend the JUSTIN pleasure through the end of the meal

Deep ruby with a garnet rim. Sweet, ripe black cherry, dried plum, and fig. Dark berries, cocoa, plum, and sweet raspberry jam with soft tannins and a medium-long, slightly raisiny finish.

Justin and Deborah Baldwin acquired their land in 1981 and planted 72 acres in vineyards that same year. Initially they were wine growers, selling to other wineries. Then, in 1987, they harvested their first grapes bottled under the Justin label. Justin Winery concentrates on two Bordeaux styled red wines: Isoscleles, which is a 100% estate blend of Cabernet Sauvignon, Merlot and Cabernet Franc and Justification, a blend of Cabernet Franc and Merlot. Varietals are planted to specific soil types on their hillside vineyards 8 miles from the Pacific Ocean, on the Central Coast.
