MFN 2018 displays a deep, velvety shade of purple/ruby. Exploding from the glass are classic Cabernet aromas of cassis, nutmeg, and hints of cinnamon spice. Rounded and full bodied, this red fruit-driven wine

sings with silky smooth tannins, opulent and rich textures, and an impossibly long finish. This wine is for

those that like soft, elegant Cabernets with no rough edges that are ready to drink immediately.

    The 2018 Cabernet Sauvignon (this was reviewed as the “My Favorite Neighbor” in last year’s report) is similarly deep purple/ruby-hued and has slightly more red fruits with lots of black raspberry, cassis, toasted spice, unsmoked tobacco, and incense aromas and flavors. It almost has a Margaux-like perfume and is medium to full-bodied, seamless, and wonderfully balanced on the palate. Some chalky minerality comes through with time in the glass, and it has plenty of tannins and a great finish. It’s not an over-the-top blockbuster and impresses just as much for its elegance as its richness.

    The barrel sample of 2018 Cabernet Sauvignon is made up of 77% Cabernet Sauvignon, 9% Petite Sirah, 8% Petit Verdot, 2% Malbec, 2% Cabernet Franc and 2% Syrah, aging in 70% new French oak. Deep ruby-black in color, it gives up luscious crème de cassis, blackberry pie, kirsch, mint chocolate, vanilla bean, coffee and grilled meats scents with touches of tobacco and sweet spices. Medium to full-bodied, it offers intense, expertly managed, ripe fruits and loads of spices with a firm, finely grained frame and great freshness, finishing long and spicy.

As Paso Robles, California has soared in number of wineries and gained in popularity, Cabernet Sauvignon has firmly taken root as the region’s number one varietal. Alone, it accounts for just over 40% of plantings and is grown throughout both the western and eastern sides of the appellation. Though viticulture here dates back to the 18th century, Cabernet Sauvignon didn’t emerge as a significant grape here until the 1970’s. But since then it has definitely made up for lost time.

Legendary winemaker and consultant Andre Tchelistcheff first recognized Paso’s potential with Cabernet Sauvignon in the early 1960’s. The calcareous soil and dramatic diurnal temperature changes of Paso’s westside particularly intrigued him. Today modern winemaking techniques and focused experimentation with various clones, rootstocks and vineyard strategies optimize the region's ideal combination of soil and climate to deliver the best fruit possible.

The results are evident in the glass. Paso Robles Cabernet Sauvignon can be mesmerizing, with rich aromas and flavors of blackberry, cassis, black cherry, graphite, toasty oak, vanilla and spice. The structure, balance and unbridled opulence of these wines impress from first sip to last. Not surprisingly, Paso Robles Cabernet Sauvignons have steadily grown in reputation, not just in the U.S., but around the world.
