    Winemaker Notes

The Piccolo Cru is refined, complex and elegant. Well integrated with black cherry, warm spice, smokey oak and supple tannins. Pair with beef wellington, slow roasted lamb with caramelized red wine sauce, or roast duck with citrus pan sauce.

Paoletti Estates Winery: All the red grapes are grown in Calistoga, an ideal area for making great reds. We are making a small amount of chardonnay from our vineyard west of the city of Napa. The Estate has 11 acres planted; One to Sangiovese, one and a half to Malbec, one to Merlot, and the remaining to Cabernet. We also have a vineyard across from Montelena on Tubbs Lane with 20 acres of Merlot. We are totally self sufficient. We harvest by hand, and use all the finest French barrels. 50 % new every year. We only use them twice. Time in barrels depends on the variety. Cabernet & Merlot up to two years, and Sangiovese much less. Chardonnay is barrel fermented up to 11 months in oak. We don't however believe in over oaking anything. Charles Hendricks is our very talented winemaker out of Davis. He is making a great name for himself in the industry.

One of the world’s most classic and popular styles of red wine, Bordeaux-inspired blends have spread from their homeland in France to nearly every corner of the New World. Typically based on either Cabernet Sauvignon or Merlot and supported by Cabernet Franc, Malbec and Petit Verdot, the best of these are densely hued, fragrant, full of fruit and boast a structure that begs for cellar time. Somm Secret—Blends from Bordeaux are generally earthier compared to those from the New World, which tend to be fruit-dominant.

One of Napa Valley’s oldest wine growing subregions but last to gain appellation status, Calistoga occupies the northernmost section of the valley. Beginning at the foot of Mount St. Helena, its vineyards stretch over steep canyons and roll out onto the valley floor. The soils in Calistoga are volcanic, which means they are heavy in minerals, low in organic matter and allow good drainage for vine roots, creating less green growth and more concentration of flavor within the grape berries.

Summer days are very hot but most nights cool down with moist ocean breezes sneaking in over the Mayacamas Mountains or from Knights Valley to its northwest.

Cabernet Sauvignon is the area’s star variety with Zinfandel coming in a strong second, though the latter commands far less price per tonnage so continues to be outshined by Cabernet in vineyard acreage, save for some important exceptions.
