This wine has been made for almost twenty years. An elegant, complex, rich, cool climate style wine made using many of the techniques for Pinot Noir. About 5% of the hand-picked fruit is placed in small overhead fermenters as whole bunches with the remainder is destemmed and pumped into fermenters. During fermentation the wine is hand-plunged 3 times per day with he wine and skins run straight from the fermenter into the airbag press. After settling, the wine is transferred into a combination of new to four year old French oak barriques and about 3% American oak where it spends a year, with three rackings. Black plum, blueberry, raspberry – this is soft and juicy on the palate, the tannins are fine grained and balanced.An elegant, complex, rich, cool-climate style wine, this variety is exceeding expectations and will continue to improve through cellaring. Dan says that this wine is made using many techniques which we use in our Pinot Noir production but using Shiraz grapes, giving a wine in the style of the traditional old world Shiraz.

Located in a tiny region southeast of Margaret River, Picardy infuses its love of Burgundy even into its Shiraz, where aromas seem almost Pinot-like. The nose is a lovely combo of brambly red and purple fruit, licorice, earthy spices, violets, and a lick of barnyard funk. The palate is medium bodied, tightly wound by fine, chalky tannins and a lift of bright acidity. A precise, harmonious wine drinking well now and perfect paired with rustic French fare.
