Straw blonde color, with light shades of green and a subtle nose of citrus fruit. Excellent structure with a depth of flavor and an acidity which brings the flavors to the fore and adds freshness, with a lasting after-taste. Has the characteristic mineral taste, typical of the variety and the soil of Santorini - at it's very best.

    The 2019 Santorini Assyrtiko, the flagship 100% Assyrtiko, is unoaked, dry (1.5 grams of residual sugar, 6.4 of total acidity and a pH of 3.08) and comes in at 14% alcohol. It was bottled in November 2019, sourced from vines over 70 years in age, all non-grafted. Solid in the mid-palate but without the very ripe nuances that some bigger wines on Santorini can acquire, this has fine structure to support the fruit and a great finish. The clean, dry and serious finish is lovely. It seems elegant and a bit understated, perfectly crafted and balanced—in other words, pretty typical. As is also typical, it always shows better the next day. This wine just has too much going on to show well in its youth on first pour. It looks splendid and able to develop over some years. It should improve, not just hold. I tend to think this will eventually overtake the 2018 Kavalieros this issue (a late release), but that is certainly more evolved and showing better today.

    This is super savory yet succulent, like sucking salt water off a stone, with a smooth, round texture that’s a hallmark of Paris Sigalas’s wines. Not as ripe as his 7 Villages wines, this is refreshing to drink now, though the steely acidity promises to preserve this well for many more years in the cellar.

Domaine Sigalas was founded in 1991 by Paris Sigalas, Christos Markozane and Yiannis Toundas. Initially, Sigalas made his wine at the converted Sigalas family home. In 1998 a new vinification, bottling and aging unit was built in a privately owned area of Oia, on the northern part of Santorini.

Sigalas has been a pioneer in the organic viticulture and has participated in a government organic farming methods program since 1994.

Paris Sigalas remains committed to the founding principles of Domaine Sigalas – a creative relationship with the tradition, the Santorini Vineyards as well as the use of the best in winemaking technology and experience.

A crisp white variety full of zippy acidity, Assyrtiko comes from the volcanic Greek island of Santorini but is grown increasingly wide throughout the country today. Assyrtiko’s popularity isn’t hard to explain: it retains its acid and mineral profile in a hot climate, stands alone or blends well with other grapes and can also withstand some age. Somm Secret—On the fairly barren, windswept Mediterranean island of Santorini, Assyrtiko vines must be cultivated in low baskets, pinned to the ground. The shape serves to preserve moisture and protect the growing grapes in its interior.
