The 2012 Sivas-Sonoma Cabernet Sauvignon showcases an inviting aroma of blackberry, flambéed cherry, oregano and a touch of white pepper. The wine is rich with layers of black currant, café ole and Kalamata olives. Full-bodied with good tannin structure, this wine finishes with a distinct flavor of vanilla stemming from an extended 18 month aging process. The wine has depth and complexity on par with some of the best Sonoma Cabernets.
Pair with mouthwatering lamb chops and balsamic reduction, pepper-crusted filet mignon with mushroom-wine sauce or fusilli with roasted eggplant and goat cheese.
Blend: 94% Cabernet Sauvignon, 2% Petit Verdot, 2% Syrah, 1% Petite Sirah, 1% Merlot
