Winemaker Notes

All the grapes in this rich varietal come from one of three Sonoma County appellations — Sonoma Valley, Dry Creek, or Alexander Valley. Harvested by hand from October through early November, the fully ripened clusters are then crushed into temperature-controlled stainless steel tanks and fermented from eight to fifteen days. The wine is then aged in different lots for fourteen to sixteen months in American and French oak, and then blended without filtration. Once bottled we hold the wine another four to eight months so that it's fully developed by the time we release it. The result is a classic Sonoma County Cabernet with firm structure, generous tannins, and deep color accentuating the hints of black currant and spicy oak.

Boasting rich, deep flavors and well-balanced oak and tannins, Sonoma County Cabernet Sauvignon is quite possibly the king of the red varietals.

For more than four decades, the wines of St. Francis Winery & Vineyards have reflected the finest mountain and valley vineyards in Sonoma County. Our founder, Joe Martin, fell in love with Sonoma Valley and established St. Francis Vineyard in 1971, planting 22 acres of Chardonnay and the first 60 acres of Merlot in Sonoma Valley. After achieving great success as a grower, Joe opened his own winery in 1979 with his business partner Lloyd Canton.

Today, a new generation of winemakers, Katie Madigan and Chris Louton, continues our long tradition of luscious, elegant, fruit-driven wines from Sonoma County grapes. We farm more than 400 acres of Certified Sustainable estate vineyards in Sonoma Valley and Russian River Valley, each with varying compositions of loam, clay and volcanic soils. We also nurture long-term relationships with top Sonoma County grape growers, giving the Winery access to some of the region's most coveted old vines Zinfandel and other varietals from acclaimed vineyards.

While Sonoma County is acclaimed—and rightfully so—for its Chardonnays, Pinot Noirs, and Zinfandels, it also produces exceptional Cabernet Sauvignon. Of the region’s 18 American Viticultural Areas, only a handful produce top-notch Cabernet Sauvignon. These appellations include Alexander Valley, Knights Valley, Sonoma Valley and Dry Creek Valley. Sonoma Cabernet Sauvignons made in these appellations can offer a complex array of aromas and flavors. Fruit notes such as blackberry, blackcurrant, cassis, black cherry and raspberry often are accompanied by hints of graphite, dusty earth, cigar box, toast and vanilla. The varietal has a rich history in Sonoma, and some of these Cabernet Sauvignons and Cabernet-based blends rival the best from Napa Valley.
