    The Iván Tamás Cabernet Sauvignon is 100% Cabernet Sauvignon from the Livermore Valley. The blend is composed of fruit from several small vineyards which were chosen for their ability to produce Cabernet Sauvignon in keeping with the Ivan Tamas style. Ivan Tamas Cabernet Sauvignon is chacterized by intense fresh cherry and berry aromas and flavors, a supple backbone and a long, full finish. This wine was aged for 9 months in American Oak barrels and should age well for up to eight years under ideal cellar conditions.

    In 1984, Iván Tamás Fuezy and Steve Mirassou left their respective companies to start Iván Tamás Winery. Having worked in the wine business for decades in a time when the industry was far more fraternal than it is now, Ivan and Steve's paths crossed often. In fact, Ivan worked with Steve at Mirassou Vineyards for a time. Thus, the partnership began with a high level of familiarity. After several years as negociants, the two partners found a home in the Livermore Valley. Today Iván Tamás is a bonded winery producing about 60,000 cases per year of eight varietals, including the "house" Chardonnay and Cabernet for the Ritz-Carlton Hotels around the world.

    A noble variety bestowed with both power and concentration, Cabernet Sauvignon enjoys success all over the globe, its best examples showing potential to age beautifully for decades. Cabernet Sauvignon flourishes in Bordeaux's Medoc where it is often blended with Merlot and smaller amounts of some combination of Cabernet Franc, Malbecand Petit Verdot. In the Napa Valley, ‘Cab’ is responsible for some of the world’s most prestigious, age-worthy and sought-after “cult” wines. Somm Secret—DNA profiling in 1997 revealed that Cabernet Sauvignon was born from a spontaneous crossing of Cabernet Franc and Sauvignon Blanc in 17th century southwest France.

    The largest and perhaps most varied of California’s wine-growing regions, the Central Coast produces a good majority of the state's wine.
