Winemaker Notes

The 2008 release is a deep red with a brick red/maroon hue. The aroma is intensely varietal and savory with a strong base of black currant fruit supporting layers of lifted pot pouri, violets and Margaret River's distinctive dried sage and bay leaf characters. These aromas are further enhanced by a lick of lovely spicy, vanillan French oak. The wine enters the mouth elegantly with velvety tannins caressing and coating the front palate. Juicy and vivacious raspberry and red currant fruits explode on the mid palate with hints of sweet toasty oak and a honeyed tobacco flavor. The fruit and oak flavors are lifted and carried by a bright and tight mineral acidity with runs through a core of characteristic sinewy Cabernet tannins. The finish, loaded full of red fruits, cool menthod, violets and chocolate oak, is long, chalky and dry.

The gragrand red plum and strawberry flavors develop out of a dense, compacted core, their sappy richness balanced by fresh acidity. As the wine evolves with air, it yields scents of the coastal forest - eucalyptus and cactus - that add to its disctinctive flavor. Decant a bottle for Cantonese spare ribs.

A noble variety bestowed with both power and concentration, Cabernet Sauvignon enjoys success all over the globe, its best examples showing potential to age beautifully for decades. Cabernet Sauvignon flourishes in Bordeaux's Medoc where it is often blended with Merlot and smaller amounts of some combination of Cabernet Franc, Malbecand Petit Verdot. In the Napa Valley, ‘Cab’ is responsible for some of the world’s most prestigious, age-worthy and sought-after “cult” wines. Somm Secret—DNA profiling in 1997 revealed that Cabernet Sauvignon was born from a spontaneous crossing of Cabernet Franc and Sauvignon Blanc in 17th century southwest France.
