Heytesbury Chardonnay is made from a barrel selection of the best Chardonnay at each vintage. Fermented entirely with wild yeast and matured in French oak for 10 months. The Heytesbury Chardonnay is made without compromise, and its production is strictly limited.

    The 2005 Chardonnay "Heytesbury" was partially wild yeast fermented along with partial malolactic fermentation. It was aged for 10 months in French oak. Light gold-colored, it offers an alluring perfume of toast, smoke, butter, hazelnuts, mineral, and tropical aromas. This leads to a medium-bodied, full-flavored Chardonnay with excellent depth and concentration. Drink it over the next 5-7 years.

Established in 1967 by regional pioneer Dr Tom Cullity, Vasse Felix is Margaret River's founding wine estate. One of the most popular and versatile white wine grapes, Chardonnay offers a wide range of flavors and styles depending on where it is grown and how it is made. While it tends to flourish in most environments, Chardonnay from its Burgundian homeland produces some of the most remarkable and longest lived examples. California produces both oaky, buttery styles and leaner, European-inspired wines. Somm Secret—The Burgundian subregion of Chablis, while typically using older oak barrels, produces a bright style similar to the unoaked style. Anyone who doesn't like oaky Chardonnay would likely enjoy Chablis.
