With a geological structure similar to the Grands Crus and excellent exposure, this terroir is considered one of the best Premiers Crus. The wine is both full and rich yet can also show its mineral and floral characteristics.

Complex bouquet with floral and fruity aromas, and intense mineral notes. Structured palate in its youth, becoming more subtle and elegant and developing ripe fruit notes.

Pair with fish, shellfish and other seafood, grilled or in a cream sauce. Poultry and white meat, grilled or in a cream sauce.

    The 2016 Chablis 1er Cru Montee de Tonnerre comes from two hectares of vines split over three types of terroir. It has a crisp, fruits de mer-scented bouquet with plenty of dew-speckled Granny Smith apples. The palate is well balanced with a fine bead of acidity, saline in the mouth and fine weight toward the finish, with plenty of persistence. This has great potential and could turn out to be one of William Fevre's best premier crus this year. Excellent.

    A more steely and stony edge to this terroir. There's also a minerally thread to the nose and palate. The fruits are in the citrusy-lime and grapefruit zone. A Very compressed, sleek and chiseled structure. Acid-fueled finish. Drink or hold.

    Ripe apple, white peach and lemon aromas and flavors are married to tangy acidity and earth and mineral notes. Lingers, with a mouthwatering finish. Drink now through 2024. 100 cases imported.

    From a 2.25 hectare parcel, this is one of the stars of the range in 2016, opening in the glass with a reserved nose of citrus zest, iodine, crushed oyster shell and a touch of crème pâtissière. On the palate the wine is concentrated, pure and crystalline, with racy acids, impressive energy and a lovely vein of saline minerality which lingers through the finish.

Domaine William Fèvre is a historical and environmental pioneer in Chablis. The domaine covers a total of 78 hectares, including 15 hectares of Grand Cru vineyards as the largest Grand Cru landowner in Chablis. One of the most popular and versatile white wine grapes, Chardonnay offers a wide range of flavors and styles depending on where it is grown and how it is made. While it tends to flourish in most environments, Chardonnay from its Burgundian homeland produces some of the most remarkable and longest lived examples. California produces both oaky, buttery styles and leaner, European-inspired wines. Somm Secret—The Burgundian subregion of Chablis, while typically using older oak barrels, produces a bright style similar to the unoaked style. Anyone who doesn't like oaky Chardonnay would likely enjoy Chablis.

The source of the most racy, light and tactile, yet uniquely complex Chardonnay, Chablis, while considered part of Burgundy, actually reaches far past the most northern stretch of the Côte d’Or proper. Its vineyards cover hillsides surrounding the small village of Chablis about 100 miles north of Dijon, making it actually closer to Champagne than to Burgundy. Champagne and Chablis have a unique soil type in common called Kimmeridgian, which isn’t found anywhere else in the world except southern England. A 180 million year-old geologic formation of decomposed clay and limestone, containing tiny fossilized oyster shells, spans from the Dorset village of Kimmeridge in southern England all the way down through Champagne, and to the soils of Chablis. This soil type produces wines full of structure, austerity, minerality, salinity and finesse.

Chablis Grands Crus vineyards are all located at ideal elevations and exposition on the acclaimed Kimmeridgian soil, an ancient clay-limestone soil that lends intensity and finesse to its wines. The vineyards outside of Grands Crus are Premiers Crus, and outlying from those is Petit Chablis. Chablis Grand Cru, as well as most Premier Cru Chablis, can age for many years.
